A glass of wine and some spaghetti....squash

I know its Monday, but I'm back on my workout routine and I felt like having a glass of wine to celebrate the hundreds of push-ups, sit-ups and sprints I endured ;)


What better to go with wine than spaghetti? What better to go with working out than squash? Now that it is fall, the market is full of awesome squashes and I had to grab a few of these puppies to help keep our kitchen warm. Halve it and put face down on oiled pan; 350 degrees for 30-45 minutes, depending on size.

We still haven't had a freeze, so our basil and oregano plants are doing well. I'll wait for the weather man to tell me when to do the big harvest. They are in pots, though--do any of you keep your herbs indoors over the winter? How do they do?


I like my red sauce pretty simple. This one just has honey, garden herbs and some red pepper flakes.


...and now the kitchen is cooling down and its time to go crawl into bed with a book!

Yum! I like a nice glass of wine every now and them with my well deserved meal. ;-D I need to get me some spaghetti squash. Hopefully they'll have some at the farmer's market this week.

I've eaten this and loved it, but I've never made one. What do they look like on the outside? I'm going to see if I can find one.

Jenn--yeah, a glass of wine is a great way to enjoy the evening :)

Snow--they're yellow and kind of oblong. Do a google image search. You want one that feels heavy for its size.

The first time I had that squash, I couldn't believe how much it looked like pasta..

We had frost last night, but no freeze yet - miracle! That's predicted for Thursday. Your pasta/squash looks wonderful. I love baked winter squash of any flavor.

while I like this squash it is never enough to fully satisfy me - I am always hungry a very short while later - this looks so good but I dont see any cheese?

Buffalo--looks like it, but doesn't taste quite like it :)

Marjie--Me too, I love to eat squash all year round. I'm not ready for a freeze yet!

Katherine--it's pretty good. I've seen some very versatile recipes for it.

Doggy--well, I ate pretty late, so I fell asleep before getting hungry again. No cheese this time, I contemplated it but decided to just go plain red sauce.

Honey in your red sauce...nice! I'm going to have to try that. Looks like a perfect end of the evening meal...and I enjoy a glass of wine occasionally. Okay, almost daily, but still. ;) Sounds good!

My local market does not store spaghetti squash. They are HORRIBLE. But they have kabocha! :-)

Oh, and I meant to ask, when was the rule written that wine is not good on Monday? I personally think that's the best day of all for wine!

Spaghetti squash is such a treat! This fall I've been into acorn squash mashed up with a little butter and S & P.

Also, I bring in my herb pots and they usually make it inside through the winter.
