Romantic Curry, our backyard, and some quick enchiladas

The weather has become gorgeous here, and we're now inside as little as possible. So little that I couldn't even talk myself into stirring... so here is a quick curry that was "roasted" in the oven while we sipped cocktails in the backyard.
Very simple--diced squash, zucchini, peppers, onions, and asparagus mixed with biryani curry paste in a 425 degree oven. After 25 minutes, add tomatoes, cook another 15 minutes and serve over yellow rice.

I'm so nice, I even made some chicken for Tavo to put in his.

Settle down to some romantic music on the tape deck and munch our curry by candlelight.






This guy has been busy.

He arranged the cupboard and removed the doors. We both decided we like the cupboards sans doors better--we'll save them for a future renter, though.

The big job, though, was the backyard. This is Tavo's creation--he cleared trash, pulled weeds, planted flowers, laid sod, EVERYTHING. Bravo!! This space has been completely transformed!



Always a crowd pleaser and only taking about 15 minutes of prep time, Spinach Enchiladas are my friend. Sauteed spinach with onions and garlic, the enchilada sauce is made with DoggyBloggy's chile.

Delicious food! And what a lovely garden you have! I can't believe how summer-ish it looks! The candles is a very romantic touch indeed!

Doggy--thanks! Life is finally beginning to seem normal again.

Buffalo--I was amazed at how much Tavo accomplished! He did this all after working on Saturday and Sunday, too!

Anette--it is nice, isn't it? Tavo did a great job. I'm so glad warm weather is finally here :)

I like the cupboards without the doors too. Takes away that extra step of having to open them. Nice. Not to mention the curry and enchiladas. A nice way to keep the afternoon stress free of cooking.. =)

You really have transformed that house and the yard. The food looks wonderful and you two deserve a romantic evening or two. I am surprised with all of the work that Tavo has done in the yard, that he hans't purchased a grill. You could cook everything outdoors and wouldn't have to leave your beautiful yard to stir!

Katherine--neither of us know how to grill. Shocking, huh? I'm thinking of getting one and trying it out this weekend...
