Rainy nights and spicy roti

I'm going on a little tangent here--I'll warn you in advance because I like you.

I've never been a chef. I consider myself more of a cook. I do think about food, but all my favorite dishes are usually someone else's idea, changed only to fit my wallet or cupboard. This is the beautiful thing about being a cook. You can appreciate and recreate the good ones. Just make sure to give credit where it's due.

Visual arts, music--there's so much pressure to create something new. I like the relief of just being a cook. I have nothing to prove--I just want to share the great creations.

So, here is a marriage of two fantastic food blog recipes. Latayy, of Mouthwatering Vegan Delights got my mind HARD SET on some Curry Obsessed Roti for the weekend :) She kept talking about her liking of curry, and I just had to go to Mel, of BitchinCamero's recipe for Curried Cauliflower and Chickpea Stew

Grab a cauliflower when its on sale. It's just so useful. Appetizers and big curries, I am a fan.
I altered Mel's recipe to include just one can of Ro-Tel with regular tomatoes. Ro-Tel can be mad spicy.

Stayed true to Mel's recipe, except added some fresh peas near the end. Tavo appoves.
Roti? (Or a lazy gal with fresh tortillas??) Who could ever know ;)

What a fantastic dish! This is good. Easy and fun. It's going into ROTI-tation. Yeah, I am that cheesy.

Good song choice, love it. Although, I never did get the concept of the video. It's one of my faves either way.

Nice job o the roti. I think I need to go get me some cauliflower.

I am really happy you decided to pay hommage to the curry. It looks super. My husband would never make the roti either he would put it in a tortilla too. The worse thing about making roti at home when you are not in the caribbean is that you have to slave over making the dough. To be honest I am so fatigue after making roti I do not enjoy it as I should. The peas look great. There is one fastfood place in Barbados that puts peas and carrots inside. Yes those canned rotel tomatoes are so spicy even for a pepper mouth like me. About the vegan beurre blanc yes you can put it on asparagus, I had to think long and hard about that.
The original beurre blanc sauce is that brown vinegar dont think it is malt you pour it over the chopped purple eshallots and this kinda cooks them. Then you add butter in the pot and over a boiling pot of water you incorporate the butter. It is tasty I admit but I had to veganize it because of the butter. I cannot consume that vegan or not.
Let me redo the recipe so I can get quantities for you before you make it ok?
give me a week and a half.

You are so creative and that's what makes it so much fun to be a cook. I don't know about you but I can't draw or sing, I just use my wits and cook by the seat of my pants and inflict this passion on the ones I love.

Here Everything's Better is only in Texas ;)

Krogers are everywhere, I think. We have Publix here, but they're kind of pricey.
